
Cheats Stroganoff
My "I cant be bothered cooking dinner but I want something nice & healthy."
I recently cooked this with The Kitchen cafe - BBC Radio Scotland
INGREDIENTS
SERVES: 2-3

Glug olive oil or decent cooking oil
-
2 big field mushrooms diced or sliced into chunks
-
170g beef or lamb sliced into strips (I use lamb rump)
-
½ tsp paprika
-
Cracked pepper & sea salt for seasoning
-
1 small clove of crushed garlic
-
Handful parsley picked & chopped
-
Handful basil fresh sliced
-
50g spinach washed & thinly sliced
-
3 spring onions washed & finely sliced
-
200g pasta ( I use fettuccine)
-
200g Crème fraiche
TO GARNISH
-
Dill, a few bits picked over top
-
Basil, a few bits picked over top
-
Paprika, a little shake

METHOD:

Add pasta to boiling salted water.

When pasta is about 4 minutes away from being ready heat a high sided fry pan with a good glug of oil, add mushrooms & cook until soft.

Add your meat to pan, stir until meat is golden-brown on all sides.

Add your paprika, garlic, basil, parsley & seasoning, stir through so it totally coats the meat & mushrooms.

When the meat is cooked to your liking add the spinach & stir through until just wilted, add the spring onion & turn the hob off.

Drain your cooked pasta & tip the drained pasta into the pan with the meat & mushrooms.

Stir the Crème fraiche through, taste & season to your own taste.

Serve into bowl, give a wee sprinkle of paprika & pick some fresh herbs over the top.
Kj's TIPS
-
You can make this veggie - use some roasted
peppers instead of meat. -
Bacon lardons works really nicely instead of beef or lamb also.
-
A full fat natural yogurt will also work well instead of Creme fraiche.
